
Bircher Muesli
with berries and yoghurt
The breakfast you make the night before and simply take out of the fridge in the morning. Ten minutes of work, eight hours of doing nothing – and the oats turn wonderfully creamy.
Ingredients for 2 servings
- 100 gRolled oats, fine
- 200 mlMilk (3.5% fat)
- 150 gPlain yoghurt (3.5%)
- 1Apple
- ½Lemon
- 1 tbspHoney
- To serve
- 150 gMixed berries, fresh or frozen
- 2 tbspAlmonds, chopped

Method
Step 1: Stir the oats together with the milk and yoghurt in a bowl.
Step 2: Coarsely grate in the apple, skin and all, and immediately stir in the lemon juice and honey – this keeps it from turning brown.
Step 3: Cover and leave to soak in the fridge overnight, or for at least 8 hours.
Step 4: In the morning, give it a good stir and add a splash of milk if needed. Top with berries and chopped almonds.
Tips
- Grate the apple with its skin on – it saves time and adds fibre.
- Prepare it in screw-top jars and it's ready to take with you straight away.
Swaps
- Vegan: use oat drink instead of milk and soya or coconut yoghurt.
- Instead of honey: maple syrup or a mashed ripe banana.
Storage
Keeps for 2 days in the fridge – add the berries and nuts just before eating.
